A not too sweet side dish of yams with splenda brown sugar and just a sprinkle of mini marshmallows for a decadent effect.

Recipe Ingredients for Lourdes' Candied Yams

2 lbs yams
1/4 cup margarine
1/4 cup splenda brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 oz mini marshmallows

Recipe Directions for Lourdes' Candied Yams

  1. Preheat oven to 400. Spray a 9x9 casserole dish with nonstick spray.

  2. Bring a large pot of water to boil. Add yams and boil until slightly underdone, about 15 minutes. Drain cool and peel.

  3. In a saucepan over medium heat, combine margarine, splenda and spices. Simmer for about 5 minutes, stirring occasionally. Stir yams into the sauce. While stirring, mash about half of the potatoes and break the others into bite sized chunks. Transfer to prepared dish.( If preparing ahead, cover and refrigerate at this point.)

  4. Bake in preheated oven for 15 minutes or until hot. Take out and sprinkle mini marshmallows on top and return to oven for 5 minutes or until marshmallows are toasted brown.
