Recipe Ingredients for Lourdes' Bread Pudding

10 slices whole grain bread
1/4 cup margarine, melted
1/2 cup raisins
1 teaspoons ground cinnamon
1/4 teaspoon nutmeg
2 cups egg beaters
3/4 cup splenda
2 teaspoons vanilla
3 cups fat free milk, hot
1/4 teaspoon ground nutmeg

Recipe Directions for Lourdes' Bread Pudding

  1. Heat oven to 375 degrees.

  2. In a large bowl, combine bread cubes, melted butter,raisins and cinnamon; mix well and transfer to a 2 quart baking dish.

  3. Use the same bowl to beat the eggs. Stir in splenda and vanilla until dissolved. Slowly whisk in the hot milk. Pour egg mixture over bread cubes, sprinkle with nutmeg and set aside to soak for 5 minutes.

  4. Bake in preheated oven for 25 to 30 minutes or until a knife inserted into center comes out clean.

  5. Cut into 20 even pieces.
