Delicious chocolate muffins with splenda, whole wheat flour, white chocolate chips, mini semisweet chocolate chips and pumpkin puree instead of oil.

Recipe Ingredients for Lourdes' Black and White Chocolate muffins

1 1/2 cups whole wheat flour
1/2 cup oat flour
3/4 cup unsweetened cocoa powder
1/2 cup splenda
1/2 cup splenda brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cups fat free milk
1 egg, slightly beaten
1/2 cup pumpkin puree
1 tsp vanilla extract
1/2 cup white chocolate chips
1/2 cup semisweet chocolate chips

Recipe Directions for Lourdes' Black and White Chocolate muffins

  1. Preheat oven to 350 degrees. Line muffin tins with paper liners and spray with nonstick cooking spray.

  2. Whisk all the dry ingredients in a bowl, then mix the wet ingredients together in another bowl. Combine together stiring just until moistenned and then add white chocolate chips.

  3. Fill muffin tins half full and bake for 15 to 20 minutes.

  4. Cool in pan for only 5 minutes and then finish cooling on wire racks.
