Recipe Ingredients for Lourdes' Banana Oatmeal muffins with Pecans

1 1/2 cups whole wheat flour
1 cup rolled oats
3/4 cup splenda brown sugar blend
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 egg, slightly beaten
3/4 cup fat free milk
1/2 cup unsweetened applesauce
1/2 teaspoon vanilla extract
1 1/2 cups bananas, mashed
1/2 cup pecans, toasted and chopped
2 tablespoons all purpose flour
1/4 cup brown sugar
1/4 teaspoon cinnamon
1 tablespoon margarine

Recipe Directions for Lourdes' Banana Oatmeal muffins with Pecans

  1. Combine flour, oats, splenda, baking powder, baking soda, cinnamon, nutmeg and pecans.

  2. In a large bowl, beat the egg lightly. Stir in the milk, applesauce, and vanilla. Add the mashed bananas and combine thoroughly. Stir the flour mixture into the banana mixture until just combined.

  3. Line muffin cups in muffin pan and spray with canola oil. Divide the batter to fit evenly into 24 muffins. (About half full)

  4. Mix together flour, brown sugar, cinnamon and margarine in a small bowl with a fork until it resembles crumbs. Sprinkle over the muffin batter.

  5. Bake at 400 degrees for 15 minutes. Cool in pan for 5 minutes and then take out to cool on wire racks or they'll get rubbery.
