Recipe Ingredients for Lourdes' Baked Lemon Tilapia

3 slices double fiber bread
1 teaspoon lemon zest
1/4 cup grated parmesan cheese
2 tablespoons olive oil
2 tablespoons parsley
1 1/2 lbs tilapia fillets
2 tablespoons margarine
2 tablespoons fresh lemon juice
1 tablespoon steak seasoning
3 tablespoons capers

Recipe Directions for Lourdes' Baked Lemon Tilapia

  1. Preheat oven to 400 degrees. Line a baking pan with aluminum foil and spray with canola oil. Place tilapia fillets in a single layer in the pan.

  2. Melt margarine in the microwave for about 15 seconds. Mix in the lemon juice and capers and then pour over the fillets. Sprinkle with the montreal steak seasoning.

  3. In a food processor, put in bread, lemon zest, and parmesan cheese, pulse until crumbs form. With the processor running, slowly pour in olive oil until well mixed. Pour crumb mixture evenly on top of fillets and bake for 20 mins or until fish flakes easily.
