Very good beans and rice recipe I found on the Prevention Website, but removed an ingredient (4ox turkey sausage links, cut into chunks) to save a few calories.

Recipe Ingredients for Louisiana Red Beans and Rice

1 tbsp olive oil
1/2 cup onion, chopped
1/2 green bell pepper, chopped
1/2 cup celery, chopped
2 tsp garlic, minced
1 tsp dried thyme
1/4 tsp salt
2 oz bay leaves
3 cups kidney beans, rinsed and drained
1/2 cup chicken broth
1 tsp hot pepper sauce
2 cups brown rice, cooked

Recipe Directions for Louisiana Red Beans and Rice

  1. Set a large pot over medium-high heat. Add the oil. Heat for 30 seconds. Add the onion, pepper, celery, garlic, thyme, salt, and bay leaves.

  2. Cook, stirring occasionally, for 3 minutes, or until starting to soften.

  3. Add the beans and broth.

  4. Cover and simmer over medium-low heat for about 15 minutes, or until the flavors blend.

  5. Remove and discard the bay leaves.

  6. Add up to 1 teaspoon of hot-pepper sauce.

  7. Serve over the rice.

  8. Pass the hot-pepper sauce at the table.
