Recipe Ingredients for Louisiana Red Beans & Rice

1 lb red beans, cooked
2 bell peppers, chopped
2 onions, chopped
3 stalks celery, sliced
1 T garlic, minced
2 c diced tomatoes
2 T olive oil
1/2 t salt
2 c brown rice, cooked

Recipe Directions for Louisiana Red Beans & Rice

  1. Saute bell peppers, onions, celery, garlic in olive oil. Add some of the bean broth and the tomatoes and simmer until tender.

  2. Add salt, cumin, paprika, thyme and hot pepper sauce to taste. Add vegetables to beans and simmer about 15 minures to blend flavors. Serve over rice.
