Cajun style hearty eggplant casserole.

Recipe Ingredients for Louisiana Eggplant Casserole

1/4 cup olive oil
1/2 pound eggplant
1/2 pound ground beef
1 small onion
2 cloves garlic
1/4 teaspoon black pepper
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
4 cups rice
2 eggs
1 1/2 cups bread crumbs
2 tablespoons butter

Recipe Directions for Louisiana Eggplant Casserole

  1. Preheat oven to 350 degrees.

  2. In a cast iron skillet, heat olive oil over medium high heat until very hot. Add cubed eggplant and salt and pepper to taste, sear until golden brown on the outside and soft, almost creamy, on the inside. Remove from pan and set aside.

  3. In the same skillet, add ground beef and cook until it starts to brown. Add diced onions, garlic, salt and pepper and red pepper flakes. Stir and let cook until well browned, 5-7 minutes.

  4. Once the beef has nice color, add 2 cups water, the reserved eggplant and sprinkle with salt. Let cook about 3 minutes.

  5. Empty contents of skillet into a large bowl and stir in rice. Allow to cool.

  6. Mix in beaten eggs and transfer to a baking dish. Top lightly with bread crumbs which have been drizzled with melted butter.

  7. Bake for 30 minutes.
