Recipe Ingredients for A Lotta Enchilada

2 tsp canola oil
1 1/2 cup onions, diced
2 tsp garlic, minced
1 tbsp chili powder
1/2 tsp chili powder
2 1/2 tsp cumin, ground
1 tsp oregano, dried
796 ml tomatoes, canned, crushed
1 cup chicken broth, less/reduced sodium
1/2 tbsp Splenda brown sugar
1/2 tsp salt
1/4 tsp black pepper
5 tbsp fresh cilantro, minced
2 cups chicken breast, chopped
1 cup canned black beans, drained, rinsed
1/2 cup red bell pepper, minced
1/2 cup whole kernel corn
1/2 cups carrots, grated
1 tbsp lime juice
10 whole wheat tortillas, small
2 cups cheddar cheese, grated
2/3 cup sour cream, light
1 tbsp green onion, minced

Recipe Directions for A Lotta Enchilada

  1. Enchilada Sauce

  2. To make sauce, heat oil over medium heat in large saucepan. Add onions & garlic. Cook slowly and stir until onions soften (2-3 minutes). Stir in 1 tbsp chili powder, 2 tsp ground cumin and oregano. Mix well. Add all remaining sauce ingredients, except cilantro. Bring sauce to a boil. Reduce heat to low. Cover and simmer for 15 minutes, remove from heat and stir in 3 tbsp cilantro.

  3. While sauce is simmering prepare filling.

  4. Filling

  5. Combine all filling ingredients (chicken, black beans, red pepper, corn, carrots, lime juice, 1/2 tsp each cumin & chili powder, and 2 tbsp cilantro) in a large bowl and mix well. Set aside.

  6. Enchiladas

  7. Preheat oven to 375 F. Spray large baking pan (or two 9 x 13 in baking dishes) with cooking spray. Add 1/2 cup sauce to filling and mix well. Set aside 1 cup of cheese for sprinkling over rolled enchiladas.

  8. Working one at a time, spreada heaping 1/3 cup of filling in centre of tortilla. Top with heaping tbsp of cheese. Roll up tight and place seam-side down in baking dish. Dish should fit 10 enchiladas (or 5 in each for 2 dishes). Repeat with remaining tortillas, filling and cheese. Spoon sauce evenly over enchiladas, making sure each is covered with sauce. Top with reserved cheese. Cover loosely with foil, bake for 30 minutes. Uncover and bake an additional 5-10 minutes until cheese is bubbly. Serve hot with a dollop of sour cream and a sprinkle of green onion. Enjoy!
