Recipe Ingredients for Lotsa Veggies Lentil Soup

2 tsp olive oil
1 onion, diced
4 cloves garlic, minced
1 tsp thyme
1 tsp tarragon
1/2 tsp salt
2 medium+stalk,+raw celery
1/2 lb carrots, diced
1/2 pound squash, diced
1 c French lentils
6 c vegetable broth
10 oz tomato sauce
1/4 lb spinach, chopped

Recipe Directions for Lotsa Veggies Lentil Soup

  1. Preheat a 4-qt pot over medium heat. Saute the onion in the oil for about 5 minutes, until translucent. Add the garlic, thyme, tarragon, dash of pepper, and salt, and saute for another minute.

  2. Add the celery, carrots, squash, lentils, and vegetable broth, and mix to combine. Cover the pot and bring to a boil. Once boiling, lower the heat to a simmer and cook for about 45 minutes, until the lentils and veggies are very tender and the soup is thickened.

  3. Add the tomato sauce and spinach, and cook until the spinach is wilted. You can serve it immediately, but as with most soups it's better if you let it sit for at least 10 minutes first, and it tastes even better the next day.
