I like this as-is, but I love lemon. More chickpeas or some homemade plain yogurt could make the flavor less intense.

Recipe Ingredients for Lots of Lemon Hummus

1/2 cup lemon juice
2 cloves garlic
2 tablespoons tahini
1 1/2 cups canned chickpeas
1 tablespoon olive oil

Recipe Directions for Lots of Lemon Hummus

  1. Drain the liquid off the beans into a bowl. Set the bowl aside.

  2. Put lemon juice and garlic in a blender. Blend well, then scrape the sides of the blender and blend again.

  3. Add tahini and blend. Scrape and blend again.

  4. Add drained beans and puree until smooth.

  5. Add olive oil and blend. If the mixture is too thick, add a small amount of liquid at a time from the beans, blending to the desired consistency.
