Recipe Ingredients for Lots of Blueberry coffeecake

3/4 c. yogurt
1 egg
1 T ground flaxseed
2 T. vegetable oil
1 c whole wheat pastry flour
1 t. baking powder
1/4 t. baking soda
1/4 c. sugar
1 t. vanilla
1 1/2 c. blueberries

Topping:
1/4 c. walnuts
1/4 c. flour
1/4 c. brown sugar
2 T. butter

Recipe Directions for Lots of Blueberry coffeecake

  1. Preheat oven to 375.

  2. Mix wet and dry ingredients for batter separately, then blend and fold in blueberries in last, be gentle.

  3. Butter or spray with cooking spray, 8 x 8 inch pan.

  4. Pour batter in and put in oven while you make the topping. Set the timer for 35 minutes at this time.

  5. Melt butter and blend with other topping ingredients. Gently dot the top of coffee cake with topping. Continue Baking at 375 until timer goes off.
