Recipe Ingredients for Lori's TO DIE FOR Blueberry Muffins

3 cups flour
1 1/2 cups sugar
1 teaspoon salt
4 teaspoons baking powder
2 eggs
2/3 cups oil
2/3 cups milk
2 1/2 cups fresh or frozen blueberries
1 cup sugar
2/3 cup flour
3 teaspoons cinnamon
1/2 cup butter, cubed

Recipe Directions for Lori's TO DIE FOR Blueberry Muffins

  1. BlueBerry Muffins:

  2. 3 cups flour

  3. 1 cups sugar

  4. 1 teaspoon salt

  5. 4 teaspoons baking powder

  6. 2 eggs beaten

  7. 2/3 cups oil

  8. 2/3 cups milk

  9. 2 cups fresh or frozen blueberries

  10. Preheat oven to 375 degrees.

  11. Grease muffin pan with Pam or line with papers.

  12. Combine flour, sugar, salt, and baking powder.

  13. Beat egg and add oil and milk.

  14. Add to flour mixture, stirring just until moist.

  15. Fold in blueberries.

  16. Fill muffin cups to the top.

  17. Topping:

  18. 1 cup sugar

  19. 2/3 cup flour

  20. 3 teaspoons cinnamon

  21. cup butter, cubed

  22. Mix together sugar, flour and cinnamon.

  23. Cut in the butter until it resembles coarse crumbs.

  24. Sprinkle topping over muffins.

  25. Bake at 375 for 22-25 minutes or until toothpick inserted in muffin comes out clean.
