Low cholesterol egg salad from hard-boiled fresh eggs 4 whites+1 yolk, with jicama and condiments.

Recipe Ingredients for Lolly's egg salad mix

1 large Egg, White
1 large Egg, Yolk
0.5 cup slices Yambean (Jicama)
1/4 cup chopped Green Onions
1 tbsp Vlasic Dill Relish
0.25 tsp Curry Powder
3 tbsp Omega Plus Light Mayonnaise
1 tsp Yellow Mustard, Organic

Recipe Directions for Lolly's egg salad mix

  1. Hard-boil eggs and cool slightly.

  2. Pell all eggs, cut in half and discard all but one of the yolks, place in bowl and mash/cut into small pieces.

  3. Add in the 1/2 cup grated jicama and the chopped onions, mixing all.

  4. Then add in the relish, curry powder, mayo and mustard.

  5. Mix well and serve. Makes three half-cup servings.
