Recipe Ingredients for The Loin King

1/4 cup ketchup
1/4 cup brown sugar
3 tbsp balsamic vinegar
2 tbsp olive oil
1 tbsp reduced sodium soy sauce
2 tsp minced garlic
1 tsp curry powder
1 tsp coriander
1 tsp ground ginger
1/2 tsp salt
1/2 tsp pepper
1.78 kg pork loin

Recipe Directions for The Loin King

  1. Whisk together all marinade ingredients in a medium bowl. Place pork in a large ziplock bag. Add marinade and seal bag. Turn bag several times to coat roast with marinade. Marinate overnight in refrigerator.

  2. Preheat oven to 325 F. Remove pork from bag and place on a rack set in a shallow roasting pan. Reserve marinade.

  3. Roast pork for about an hour and a half, or until 155F

  4. While oast is cooking, pour reserved marinade into a small saucepan. Bring to a boil, then reduce heat to low and simmer for a minute. Brush roast generously with marinade during the last 20 minutes of cooking.

  5. Remove roast from oven. Cover loosely with foil and let rest for 10 minutes before slicing.
