A Buffalo twist on classic fudge brownies. Moist, dense, and delicious.

Recipe Ingredients for Loganberry Fudge Brownies

1/2 cup granulated sugar
1/2 cup Splenda
1 tsp vanilla
1/3 cup cocoa powder
1/2 cup unsweetened applesauce
1/4 tsp salt
1/4 tsp baking powder
1/2 cup white whole wheat flour
1 oz semisweet chocolate, melted
50 grams Brummel & Brown light spread
75 grams powdered sugar
1 tsp vanilla extract
1/2 tsp raspberry extract
30 grams cocoa powder
1/3 cup Toll House semisweet morsels
1/3 cup pecan halves
1 oz loganberry concentrate syrup

Recipe Directions for Loganberry Fudge Brownies

  1. Preheat oven to 350 degrees F.

  2. Spray an 8x8" baking dish with nonstick cooking spray.

  3. Combine eggs, granulated sugar, and Splenda.

  4. Add applesauce and vanilla extract.

  5. In a separate bowl, combine flour, baking powder, salt, and cocoa powder.

  6. Mix dry ingredients into wet until just mixed.

  7. Stir in Toll House morsels and pecans.

  8. Pour batter into prepared baking pan.

  9. Bake in center of oven for 25 to 30 minutes, or until fork tines inserted in center come out clean.

  10. While the brownies are cooling, prepare the frosting.

  11. Melt the semisweet chocolate in a large mixing bowl.

  12. Add the Brummel & Brown, and beat with an electric mixer.

  13. Mix in the vanilla and raspberry extract.

  14. Gradually beat in the cocoa powder and confectioner's sugar until all of it is combined.

  15. Allow the frosting to settle.

  16. Pierce the top of the brownies with a fork, then pour the 1 oz of Loganberry syrup over the top. Allow the brownies to soak up the syrup.

  17. Spread frosting over the brownies with a rubber spatula.

  18. Serve room temperature or chilled for an even denser brownie.
