This will get you through the week. I make this every Sunday night. I'll make up a few burrito's at a time and I wrap them in a paper towel and then I wrap them in aluminum foil. I stick them in the refrigerator. My husband grabs one before leaving for work in the morning and I'll have one for breakfast as well. Feel free to add whatever fillings you want with it. We always use a tablespoon of salsa, a little bit of low fat mozzarella and yellow mustard. That might sound weird, but it tastes so good!! ENJOY!

Recipe Ingredients for Logan & Elaine's Breakfast Burrito

1 lb Breakfast Sausage
12 eggs (scrambled)
1/3 cup 2% milk
15 flour tortillas
15 tbsp salsa
15 tsp yellow mustard
15 tbsp low fat mozzarella

Recipe Directions for Logan & Elaine's Breakfast Burrito

  1. brown 1 lb of Rice's medium breakfast sausage; put to the side.

  2. mix 1 dozen eggs with 1/3 cup 2% milk; scramble (add pepper to taste)

  3. combine sausage with eggs and refrigerate.

  4. Be sure to have some flour tortillas on hand as well as salsa and whatever fillings you want!
