Locro De Papa Recipe

Recipe Ingredients for Locro de Papa

1/2 onion, minced
2 tbsp canola oil
4 tbsp whole milk
4 cups water
6 potatos
1 tomato, chopped
1 avocado, chopped

Recipe Directions for Locro de Papa

  1. Saute onion in oil.

  2. When onion is cooked through, add 1-2 tbsp milk and stir to cook down. Add another 1-2 tbsp milk and stir to cook down.

  3. Add 4 cups of water and bring to boil.

  4. Add some achote for color.

  5. Peel and chop potatoes. Add to boiling water.

  6. Salt to taste and allow to cook, stirring occasionally.

  7. Cut up some cilantro for garnish and serve with tomato and avocado.
