Recipe Ingredients for Lobia Shimla (musical's kitchen)

8 oz Peas Black-Eyed
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
3 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 medium (2-1/2" dia) Onions
3 tsp Ginger Root
1/4 tsp Caraway Seed
2 g Turmeric Powder
1/2 oz Peppers
10 grams Lemon Juice
2 tsp Soy Oil
1/2 cup Coriander Leaves

Recipe Directions for Lobia Shimla (musical's kitchen)

  1. Soak the lobia for half an hour or so in warm water.

  2. Pressure cook it with just a lil' bit of water (4-5 whistles) and allow to cool

  3. In hot oil, spluttershah-jeera and then saute' julienned onions till golden brown.

  4. Add chopped ginger and saute'. Add the julienned bell peppers/capsicum and stir. Cook for 4-5 minutes.

  5. Now add the chopped tomatoes, stir and cook on low till a thick masala is made.

  6. Add just a pinch of turmeric (adding less turmeric allows for the red hues of tomatoes to take over) and red chilli powder.

  7. Now add the lemon juice and stir.

  8. Add just a lil' bit of water to make a thick gravy and add the cooked beans to this.

  9. Cover and cook on low heat for the beans to absorb all the flavors and spices.

  10. Add chopped cilantro

  11. Serve hot with bread or rice of your choice.
