Recipe Ingredients for Loaf, Garden Harvest Zucchini Carrot Apple Pineapple

1/4 cup all-purpose flour
3/4 cup whole wheat flour
2 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 apple, medium
1 carrot, medium, shredded
1/2 cup zucchini, shredded
336 crushed pineapple
1/4 cup walnuts, chopped
1/4 cup canola oil
1/4 cup milk non-fat
1/4 tbsp vinegar
2 eggs, large

Recipe Directions for Loaf, Garden Harvest Zucchini Carrot Apple Pineapple

  1. Preheat oven to 350 degrees.

  2. Make buttermilk by mixing milk and vinergar. Set aside.

  3. Chop walnuts and toast in 350 degree oven for 5 minutes.

  4. Grate zucchini, carrot, and apple (all but carrot with hand blender).

  5. Open crushed pineapple and drain well.

  6. Mix dry ingredients in large bowl.

  7. Mix walnuts with shredded vegetables.

  8. Mix wet ingredients: milk, veg oil, and eggs.

  9. Pour shredded vegs into dry ingredients and mix, then add pineapple. Then, mix the wet into the dry. Blend well.

  10. Line pan bottoms with parchment. Use an 8" x 4" loafpan.

  11. Bake at 350 degrees for 50 minutes. Test with a toothpick.

  12. Cool 10 mins on a wire rack in the pan. Then turn out.
