Recipe Ingredients for Loaded Veggie Soup


Veggies:
20 g leek, thinly sliced
170 g tomatoes, diced
45 g spinach, washed & roughly torn
150 g cabbage, chopped
150 g celeriac, chopped
2 cloves garlic

B Veggies:
150 g carrots, chopped
150 g broccoli, cut into florets
140 g potato, diced
500 g chicken stock (I actually used Knorr brand Stock Pots - 28g pots of concentrated stock that are diluted with 500mL water)
1 l water
100 g ditalini, cooked

Recipe Directions for Loaded Veggie Soup

  1. Place stock, 1L water and A Veggies in a large pot, bring to boil and allow to simmer for 20min.

  2. Using a masher, roughly mash the cooked veggies slightly - this helps thicken the soup somewhat.

  3. Add in B Veggies and pasta - add some water to allow the pasta to cook - and simmer till potatoes are tender and pasta is cooked.

  4. Serve with warm crusty bread.
