Recipe Ingredients for Loaded Sweet Potato Skins

220 g sweet potato, baked
40 g Cheddar Cheese
40 g Red onion

Recipe Directions for Loaded Sweet Potato Skins

  1. Bake the Sweet Potatoes for about an hour, until the outside is husk like.

  2. Scoop out the insides of the potatoes as soon as possible, store the skins and the insides in separate containers in the fridge overnight.

  3. When ready to cook, mix the insides of the potatoes with the cheese and onion, then spoon the mixture into the skins. bake for 20-30 minutes, until the cheese is bubbling and golden. Add grilled bacon if desired.
