Like the famous Rhino Fries from TJ Rockwell's, these baked wedges have everything you could want on a potato!

Recipe Ingredients for Loaded Potato Wedges

2 lb large baking potatoes(about 3 potatoes)
2 tbsp olive oil
1 tsp black pepper
1 tsp paprika
1 tsp minced garlic
3/4 cup reduced fat cheddar cheese, shredded
14 grams bacon, fried, crumbled
1 tsp dried dill
1 tsp chili powder

Recipe Directions for Loaded Potato Wedges

  1. Microwave potatoes on HIGH for 5 minutes. Allow to cool enough that they can be handled.

  2. Preheat oven to 375 degrees.

  3. Cut potatoes lengthwise into wedges.

  4. Lay wedges in a baking dish, and drizzle with the olive oil. Sprinkle with the seasonings.

  5. Toss wedges in the oil and seasonings to evenly coat.

  6. Bake wedges until tender and edges are browned, about 25 to 30 minutes.

  7. Remove potatoes from oven. Allow to cool for about 5 minutes.

  8. Cover potatoes with cheese, ranch dressing, and bacon. Garnish with sprinkling of dill.

  9. Eat with your hands - it's okay to get messy!
