5 pounds onion, peeled and large diced
2 pounds pastry flour
15 pounds potatoes, peeled and large diced
3 1/2 gallons chicken stock
4 pounds bacon, cooked and chopped
5 pounds cheddar cheese, shredded
1 tablespoon salt
1/2 tablespoon pepper

  1. 1) Melt butter in large stock pot over medium high heat

  2. 2) Add the onions into the butter and cook until tender

  3. 3) Add the flour and make a roux in the pot (adjust consistency of roux if needed)

  4. 4) Add the stock and bring to a simmer
