Recipe Ingredients for Loaded Baked Potato Soup

2 medium Potatoes, White, Flesh And Skin
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 can Soup, Chicken Broth
3 Pork, Cured, Bacon
3 cup Cheddar Cheese
2 tbsp Onions, Spring Or Scallions
1 cup Cream, Sour, Cultured

Recipe Directions for Loaded Baked Potato Soup

  1. 1.

  2. Pierce potatoes and microwave on HIGH 5 min. turning over after 2-1/2 min.

  4. Combine broth, milk and potatoes in large microwaveable bowl. Microwave on HIGH 6 min. Stirring after 3 min.

  5. 3.

  6. Slightly crush potatoes with a potato masher.

  7. 4.

  8. Reserve 2 Tbsp. each of the bacon and cheese and 1 Tbsp. of the onions for topping; set aside.

  9. 5.

  10. Add remaining bacon, cheese and onions to soup.

  11. 6.

  12. Serve topped with reserved bacon, cheese, onions and sour cream.
