A hearty soup that won't kill your daily calorie count

Recipe Ingredients for Loaded Baked Potato Soup

3 medium potatoes
2 cup half and half
1 can chicken broth
1 cup shredded cheese (1/4 sharp cheddar, 3/4 medium cheddar)
2 tbsp sliced green onion
19 grams bacon (3 slices cooked, broken into pieces)
1/2 tsp black pepper

Recipe Directions for Loaded Baked Potato Soup

  1. In a medium-sized pot, boil water.

  2. Peel potatoes.

  3. Cut potatoes into evenly sized cubes and place in boiling water.

  4. When potatoes are soft after a few minutes, drain water from the pot.

  5. Add in milk and broth to the pot and mash potatoes.

  6. Bring to a boil.

  7. Then turn heat down and mix in cheese, green onions, bacon and black pepper.

  8. Let simmer for 3 minutes.
