A not too bad for you snack or appetizer. Use the baby red potatoes. 5 ounces is about 4 to 5 of them

Recipe Ingredients for Loaded Baked Potato Skins

5 ounces red potatoes
1 serving Sour Cream Light Grade A Dairy
1 T Light Spread
1 T sliced green onion
1 T Real Bacon Bits
1 ounce fat free cheese
2 T skim milk
1 salt and pepper to taste

Recipe Directions for Loaded Baked Potato Skins

Preheat oven to 375. Bake baby red potatoes until fork tender. Cut in half and with a melon baller or teaspoon, carefully scoop out center. Place in a bowl, mash with butter, sour cream, and milk. Stir in bacon bits and half of the cheese. Scoop mixture back into skins and top with remaining cheese. Bake for 15-20 minutes or until cheese is melty and delicious. Remove from oven and top with sliced green onion. Enjoy!
