3 1/2 cups cake flour (not self-rising)
1/2 cup unsalted butter, softened
1/4 cup vegetable shortening
1 1/3 cups fructose
3 large eggs, at room temperature
6 tablespoons red food coloring
3 tablespoons unsweetened cocoa
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons salt
1 1/2 cups buttermilk
1 1/2 teaspoons cider vinegar
1 1/2 teaspoons baking soda
200 grams butter
250 grams low fat cream cheese
450 grams splenda

  1. cream butter and sugar. add eggs one at a time. mix cocoa, food coloring and vanilla and add to batter. mix buttermilk and salt and add to batter alternating with flour mixture. add vinegar and baking soda.
