An enchilada sauce I found on the Medifast recipes board.

Recipe Ingredients for Lo-carb Enchilada Sauce

200 g mushrooms
170 g zucchini
170 g green bell pepper
1 clove garlic, crushed
1 tbsp Cumin Seed
1 tbsp Tabasco
170 g tomato

Recipe Directions for Lo-carb Enchilada Sauce

  1. Put the mushrooms, zucchini, pepper and garlic in pan over medium-high heat.Cook until they are all hot and soft.

  2. Add the cumin and tabasco. If you like hotter, add more Tabasco, if not, use less.

  3. Stir well and remove from heat.

  4. Take 1/2 of the mixture and place in a blender (or Magic Bullet) with the fresh tomato. Blend well, taste, add salt and pepper as desired.

  5. If you like a chunky enchilada sauce, just add the pureed into the chunky and mix well. If you want it all blended then puree the rest and mix well.
