Recipe Ingredients for LL's turkey/portabello fritatta

5 eggs, omega
4 oz turkey breast, chopped
1 onion, chopped
1 cup broccoli, chopped
1 oz mozerella cheese, grated
1 cup portabello mushroom, chopped
2 tbsp olive oil, extra-virgin

Recipe Directions for LL's turkey/portabello fritatta

  1. preheat oven to 350F

  2. in a cast iron skillet, saute mushrooms and onion in olive oil

  3. add brocolli and turkey

  4. turn heat to low medium

  5. separate eggs, beat whites to very soft foam

  6. add yolks

  7. add pepper to taste

  8. pour over sauteed veggies and meat

  9. sprinkle with grated cheese

  10. stick in oven for 10-15 minutes or until cheese has a hint of color
