1 1/2 pounds lean beef
1 cup brown rice
6 quarts water
1 large onion
6 ounces carrots
4 ounces celery
1 tablespoon garlic
18 ounces frozen mixed vegetables
14 1/2 ounce canned kidney beans
14 2/5 ounce canned stewed tomatoes
1 yellow bell pepper
1 red bell pepper
9 ounces greens
1 tablespoon extra virgin olive oil
