A little french, a little lighter, a whole lotta comforting! You could use cream instead of milk for a richer taste, but higher calorie count.

Recipe Ingredients for Liz's Turkey Noodle Casserole

14 oz Rotini , Barilla Plus
1 tbsp extra virgin olive oil
6 medium slices bacon, chopped
1 3/4 lb turkey breast, ground
1 medium onion, chopped
4 cloves garlic, minced
3/4 c white wine
1 1/2 c chicken stock
1/2 c milk 1%
2 tbsp light sour cream
1 salt and pepper to taste
2 tsp thyme, dried (Or Herbes de provance which I prefer)
1/4 tsp nutmeg, grated
1/2 c sharp white cheddar cheese, grated (Could also use Gruyere or any Swiss cheese about 8 oz)
2 slices whole wheat bread
3 tbsp flat leaf parsley, chopped

Recipe Directions for Liz's Turkey Noodle Casserole

  1. Preheat broiler.

  2. Cook pasta in salted boiling water until just shy of al dente. Pasta will continue to cook once you combine with the sauce.

  3. In a skillet cook your bacon until the bacon has rendered and is mostly crisp. Remove to a paper towel lined dish and reserve.

  4. Add lean ground turkey breast to the same pan and season with garlic salt or salt and pepper. Cook over medium to medium high heat, crumbling with your spatula as it works. Once the turkey is almost cooked through and starting to brown, move to one side of the pan.

  5. Add onions to the other half of the pan. Cook until the onions are translucent and starting to brown at the edges. Add garlic to the pan and mix the meat and vegies together. Add your herbs or thyme and a pinch more salt if desired. Cook for about 5 more minutes taking care not to burn the garlic.

  6. Deglaze the pan with the wine and scrape up any bits that have gotten stuck to the bottom of the pan. Add the stock and bring up to a bubble.

  7. Add the milk and reduce heat to low.

  8. For breadcrumb topping: tear up pieces of whole wheat bread into food processor bowl and process until you have fine crumbs. (Note: I have made the crumbs with toasted and untoasted bread and each is delicious).

  9. Combine cooked pasta, sauce and half the bacon. Spread in a casserole dish. Top with cheese, bacon then crumbs.

  10. Broil the casserole until the cheese is melted and the crumbs are golden. Garnish with chopped parsley.

  11. Delicious! Wonderful with a green salad
