Recipe Ingredients for Liz's Potato Leek Soup

1 lb. red potatoes
1 leek
3 cups chicken broth
5 cloves garlic
1 cup low fat milk
1 salt
1 pepper

Recipe Directions for Liz's Potato Leek Soup

Wash, and quarter potatoes. Mince garlic, dice leeks. Place in pot along with chicken broth. Once the potatoes have softened, allow mixture to cool slightly. Place in blender of food processor. Add the milk to thin mixure to desired soup consistency. Return to heat and warm through. Add salt and pepper to taste.
