I came up with this recipe based on what I had in the pantry and a few different recipes I looked up online. The crust is very crunchy and flavorful and the herbs can be changed to suit your taste. Yum!

Recipe Ingredients for Liz's Oven Fried Chicken Fingers

1 1/2 lb boneless skinless chicken breasts, cut into 1" strips
15 crackers, crumbled
2 c bran cereal
1/3 c bread crumbs, sourdough
2 tsp sesame seeds
2 tbsp herbs, herbes de provence
1 1/2 tbsp minced onion, crushed with mortar and pestal
1 tbsp garlic powder
1 tsp sea salt, with garlic
1 tsp salt, coarse
1/4 tsp pepper

Recipe Directions for Liz's Oven Fried Chicken Fingers

  1. Preheat oven to 350 degrees F. Lightly spray a cookie sheet with olive oil spray or cooking spray.

  2. In a food processor, add the crackers, bran cereal and bread crumbs and pulse until finely ground. Add the herbes, onion, garlic powder, salts and pepper.

  3. Arrange a breading station in three shallow dishes. Put 2 tbsp flour in the first. Whisk up 2 eggs in the second.

  4. Put the crumb/herb mixture in the third.

  5. Lightly dip the chicken pieces in the flour taking care to shake off the excess. Coat in the egg mixture. Coat in the crumb mixture, pressing on the coating to help it to adhere.

  6. Lightly spray chicken with olive oil spray. Bake for 30 - 40 minutes or until juices run clear.
