Recipe Ingredients for Liz's Huevo Rancheros

2 tortillas Extra Thin Yellow Corn Tortillas
0.25 cup Black Beans, Organic
0.25 cup chopped raw Vidalia Onion
0.25 cup chopped raw Grape Tomatoes
1 large Egg, Whole
1 serving Hot Sauce
1 serving Medium Pitted Black Olives

Recipe Directions for Liz's Huevo Rancheros

  1. Chop the tomatoes, onions and olives and set aside.

  2. Drain and rinse the black beans- heat through.

  3. Toast the tortilla's on both sides in a hot cast iron pan, no oil.

  4. Place tortillas on a plate, and spoon the black beans on top, followed by the onion, tomato and olives.

  5. Fry the egg in a small amount of butter or oil then place on top of your tortillas and veggies..

  6. Add hot sauce, to taste
