This is my version of Ellie Krieger's Nutty Granola. This is the first time I have made granola and it is AWESOME! Ellie makes her's with maple syrup but I am not much of a fan of maple. Awesome with fruit and yogurt, with milk or just to snack on.

Recipe Ingredients for Liz's Granola

3 c old fashioned oats
1/2 c almonds, unsalted sliced
1/2 c walnuts, unsalted chopped
1/2 c pecans, unsalted chopped
1/2 c dried cranberries
1/4 c dried blueberries
3/8 c light corn syrup, organic vanilla flavored
1/8 c honey, blueberry flavor
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract

Recipe Directions for Liz's Granola

  1. Preheat oven to 300 degrees F and lightly coat cookie sheet with cooking spray.

  2. Mix together all dry ingredients then add in syrup and honey. Should have 1/2 cup syrup/honey total. Spread out on cookie sheet and bake for approximately 30 minutes. Stir granola occasionally for even browning and to help prevent sticking.

  3. Makes 12 1/2 c servings

  4. Note: Can use any or combination of honey, light corn syrup, maple syrup as per preference. Just make sure it equals 1/2 cup.
