This is my variation of a Rachel Ray recipe for Cider Vinegar Chicken. My family love's this dish. My daughter requests it regularly. Also very healthy. This is very good with mashed potatoes. The onions and sauce are good on the chicken, potatoes, even your side vegies. Yum-o!

Recipe Ingredients for Liz's Cider Vinegar Chicken

1 1/2 lb Boneless skinless chicken breasts
2 tbsp Extra Virgin Olive Oil
1 tsp Garlic Salt
1 1/2 onion, sliced thin
4 cloves garlic
2 tbsp Thyme or Herbes de Provence
3 tbsp brown sugar
1 tsp salt
1/2 c cider vinegar
2 c Chicken broth

Recipe Directions for Liz's Cider Vinegar Chicken

  1. Season the chicken with the garlic salt and saute over medium high heat in EVOO until lightly golden on each side. About 4-5 minutes per side. Remove Chicken to a platter and cover with aluminum foil.

  2. In the same skillet, add the onions (adding additional EVOO if necessary). After 1-2 minutes add the garlic, thyme and or herbes de provence and the brown sugar to the pan. Continue to cook over medium to medium high heat until the onions are really carmelized.

  3. Add the vinegar and stock and bring to a boil over high heat. Add the chicken back to the pan and cook in the onions and liquid for 5 minutes per side.
