This is my version of Chicken Tortilla Soup. Wonderfully healthy, loaded with vegies. Change it up to your liking. The lime juice and zest really sets this recipe off. We top ours with cilantro, chips, cheese and sour cream or plain yogurt. Yum!

Recipe Ingredients for Liz's Chicken Tortilla Soup

1 1/2 lb chicken breast, cut into 3/4" pieces
2 tbsp olive oil
1 tsp garlic salt
1 onion, diced
1 green pepper, diced
6 garlic cloves, minced
2 Jalapeno peppers, finely minced
1 tsp smoked paprika
1 tsp cumin
1 tsp coriander
1 tsp garlic powder
1/2 tsp cayenne pepper
1 pinch crushed red pepper flakes
1 tbsp oregano
1 tbsp salt, coarse
1/2 tsp pepper
2 c celery, finely diced 1/4 to 1/2" pieces
2 c carrots, finely diced 1/4 to 1/2" pieces
1 zucchini, finely diced 1/4 to 1/2" pieces
1 yellow squash, finely diced 1/4 to 1/2" pieces
29 oz canned tomatoes, diced any style
14 1/2 oz canned corn
2 tbsp Lime juice, fresh and zest
2 tbsp cilantro, finely chopped
8 c chicken stock

Recipe Directions for Liz's Chicken Tortilla Soup

  1. Heat olive oil in large stock pot over medium high heat. Add chicken, season with garlic salt and saute until it has a nice golden color. No need to cook through at this point.

  2. Add onions and green pepper and cook 1-2 minutes. Add Jalapeno and garlic and continue to cook another 1-2 minutes.

  3. Add all of the dried spices, salt and pepper stirring to evenly distribute the spices. Cook another 2 minutes.

  4. Add the rest of the vegies, tomatoes and broth to the pan. Bring to a boil and reduce heat to keep at a simmer, about medium. Simmer 20-30 minutes. In the last few minutes of cooking, add drained corn to heat through.

  5. To serve, ladle soup into bowls. Top with cilantro, lime zest and lime juice. Add chips, sour cream and cheese. Lovely!
