Very yummy salad that is good hot, warm or cold.

Recipe Ingredients for Liz's Balsamic Potato, Cauliflower and Green Bean Salad

2 lb red potatoes
3/4 lb green beans, fresh
2 c cauliflower, fresh
1/3 c olive oil
4 tbsp balsamic vinegar
1 tbsp dijon mustard
2 tbsp lemon juice, fresh
1/2 tsp sugar
3 green onions, minced
2 tbsp thyme, fresh
1 tsp salt
1/4 tsp pepper

Recipe Directions for Liz's Balsamic Potato, Cauliflower and Green Bean Salad

  1. Scrub potatoes, cut in half lengthwise and then into thirds (if small potatoes adjust accordingly, about 1" to 1 1/2" pieces). In large pot cover with 3-4" of water and bring to a rolling boil. Cook for about 10-12 minutes.

  2. Trim green beans and cut in half or thirds. Trim about 1/2 head of cauliflower into large florets. Add to potatoes cook for about 3 - 4 minutes.

  3. Drain vegetables and add to large bowl.

  4. Mix together the dijon mustard, balsamic vinegar, lemon juice, sugar, salt, and pepper in a small bowl. Very slowly stream in olive oil until emulsified.

  5. Add the vinagrette to the potatoes and vegies. Add in green onions and thyme. Stir to combine. Allow salad to sit for awhile to allow flavors to combine. Yum!
