Recipe Ingredients for Liver & Pork Pate GI Jane

4 oz bacon, smoky, chopped
4 oz liver, lambs, diced
8 oz pork, shoulder, diced
4 oz butter
1 small onion (or 3 shallots), finely chopped
1 clove garlic, crushed
2 tablespoons olive oil
2 tablespoons breadcrumbs
3 tablespoons (Marsala/Sherry) wine
1 tablespoon peppercorns, cracked in a pestle and mortar
1 tablespoon sage, freshly chopped
1/2 teaspoon cayenne pepper

Recipe Directions for Liver & Pork Pate GI Jane

  1. Heat 2oz of the butter and all the olive oil in a large saute pan and add the garlic and onions. Cook gently for a few minutes until softened.

  2. Then add the pork, bacon, cayenne and a few cracked peppercorns (but no salt because the bacon is salty enough). Cook this gently with a lid on for about 10-15 minutes, stirring occasionally and then add the chopped lambs liver and marsala/sherry. Simmer gently for a further 4 - 5 minutes or until the lamb liver stops looking pink.

  3. Remove the pan from the heat and stir in a little of the chopped, fresh sage together with all the breadcrumbs. Transfer the mixture to a blender and pulse until it is the required texture - coarse or smooth. Or transfer to a tall pot and blend with a hand blender. (If the mixture is too dry you can add a little chicken stock.)

  4. Finally, stir in the rest of the cracked peppercorns and chopped sage and transfer to a serving dish or to individual ramekins. Melt the rest of the butter, smooth the top of the pate with the back of a spoon and then pour the melted butter on top. Garnish with some sage leaves and peppercorns and chill until required
