Serve with 1 slice whole grain Parmesan Garlic Bread and 1 cup steamed asparagus

Recipe Ingredients for Lively Chef's Salad

1 head romaine lettuce
1/2 large green pepper, in thin strips
3 scallions, chopped
2 cloves garlic, minced
4 T parmesan cheese
6 cherry tomatoes
1 c. chick peas, cooked,drained and rinsed
1 c. kidney beans, cooked, drained and rinsed

Recipe Directions for Lively Chef's Salad

In a large bowl, combine lettuce, green pepper, scallions, cloves, parmesan cheese, tomatoes, and Tofu Herb Dressing, and toss lightly. Divide among 4 salad plates. Top each serving with 1/4 cup each of the beans and 1 T. of the cheese
