Buckwheat is a seed, not a grain, and makes great crepes and pancakes. Makes 10 pancakes, serves 2. Serve with Grade A maple syrup or raw honey. (NEVER use commercially prepared pancake syrups or corn syrup.) - For Crepes - Add 1/2 cup more water and omit maple syrup. Fill with roasted vegetables in Mornay sauce or sauteed chinese vegetables in brown sauce.

Recipe Ingredients for Littledove's Buckwheat Pancakes or Crepes

1 c buckwheat flour
1/4 tsp baking soda
2/3 tsp baking powder
2 T Milk Powder (Non-Fat Dry)
1 c water
1 pinch sea salt
3 T maple syrup
1 T butter
1 egg

Recipe Directions for Littledove's Buckwheat Pancakes or Crepes

  1. On medium heat, preheat large stainless steel skillet. No oil required.

  2. Separate an egg white into a medium bowl, and toss the yolk into a blender.

  3. Add to blender and mix: milk powder, water, maple syrup and butter.

  4. Beat the egg yolk to stiff peaks on high speed.

  5. In a large bowl, combine buckwheat, baking soda, baking powder and salt. Pour the blender milk into the flour and mix with a rubber spatula about 10 good strokes, scraping the bowl each stroke.

  6. Gently fold the egg white into the batter until no more white balls appear.

  7. Use a 1/4 cup measuring cup to pour batter into skillet. Wait for bubbles to break, then turn and wait a minute or so to brown on the other side.

  8. Remove to a warm griddle until you use all the batter.
