Quinoa Patties are a great high protein, vegetarian meal option. Perfect as a snack or side dish or main meal when paired with a salad. These are good hot or cold. (My teenage daughter takes them to school.) Great with a few slices of avocado and a little salsa.

Recipe Ingredients for Little Quinoa Patties

2 1/2 cups cooked quinoa
4 large eggs, beaten
1/2 tsp salt
1/3 cup finely chopped chives
1 yellow onion, finely diced
1/3 cup Parmesan cheese
3 cloves garlic, chopped
1 cup breadcrumbs, whole grain
1 tbsp olive oil
1/3 cup fresh salsa

Recipe Directions for Little Quinoa Patties

  1. Preheat oven to 400 degrees

  2. Combine quinoa, eggs and salt in medium bowl. Stir in chives, onion, cheese, garlic and salsa. Add breadcrumbs, stir and let sit for a few minutes so the crumbs can absorb some of the moisture.

  3. Grease cookie sheet with oil.

  4. Form 12 1 inch thick patties. (Use ice cream scoop to get a uniform shape, then flatten with your hand or a spatula.)

  5. Bake for 20 - 25 minutes, flip so the other side can crisp up and continue baking until they are golden brown.
