It uses English muffins, which make for a great crunchy crust, your favorite tomato-based sauce and a small amount of grated cheese of your choice. A more healthy alternative to that pizza you really want to order or get out of the freezer. One serving is half of an English muffin slice. You will probably want 2 or 3 servings to satisfy as a small meal, 4 or 5 for a larger meal.

Recipe Ingredients for Little Pizzas

1 english muffin
4 tsp pasta sauce
2 tsp monterey jack cheese, grated
2 tbsp ricotta cheese

Recipe Directions for Little Pizzas

  1. Set oven/toaster oven to 350.

  2. Cut English muffin in half and put in oven for 5 to 10 minutes (depends on various states of thaw from freezer/fridge/cupboard) or until muffin is lightly browned (to preference).

  3. Pull out muffin halves and put 2 tbsp (roughly) of sauce on each half, spread as desired.

  4. Sprinkle each half with cheese (roughly 2 tbsp, more or less if desired).

  5. Put muffin halves back in oven for a few minutes, or until cheese is melted to preference.
