Originally calls for ground beef and fresh blanched spinach. To make it healthier I switched it to ground turkey and for quick and easy I use frozen spinach. Looks dreadful, but it is a family favorite here.

Recipe Ingredients for Little Joe's Scramble

2 tablespoons of oil
1/2 cup chopped onion
1 lb ground turkey
16 oz frozen spinach, thawed and drained
4 eggs, lightly beaten
4 tablespoons parmesan cheese
1 pinch of Salt
1/4 tsp of tabasco
6 kaiser rolls

Recipe Directions for Little Joe's Scramble

  1. Heat the oil in a large skillet. Add the onion, and saute over medium heat until soft. Add the turkey, using a fork to break it up into small bits. Cook until the redness is gone. Add the spinach, and mix well. Cook, stirring, for 3-4 minutes. Add salt to taste. Mix the Tabasco with the eggs. Pour over the beef mixture, and cook, stirring until the eggs are set. Remove from heat, transfer to a warm platter and sprinkle with parmesan.

  2. Transfer to rolls to eat as a sandwich.
