Lithuanian cucumber salad with radish and scallion in a sour cream and yogurt dressing.

Recipe Ingredients for Lithuanian Cucumber Salad

3 cup, sliced Cucumber, Peeled
5 large (1" to 1-1/4" dia) Radishes
2 medium (4-1/8" long) Onions, Spring Or Scallions
4 tsp Sour Cream
0.25 cup Yogurt
1 serving Sea Salt
1 dash Pepper, Black
1 wedge yields Lemon Juice

Recipe Directions for Lithuanian Cucumber Salad

  1. Peel and slice the cucumbers, salt and allow to drain in a colander for about an hour. Dry well.

  2. Slice radishes and scallions and mix with cucumbers.

  3. Add sour cream, yogurt, squeeze of lemon juice, black pepper and toss well to coat.
