Curried tofu scramble, with a bit of kick. These are just the basics, add or change to suit your tastes.

Recipe Ingredients for Lite Tofu Scramble

8 oz raw potato
4 oz onion
1 clove garlic
1 tsp curry powder
1/4 tsp cayenne pepper
1 tsp black pepper
18 3/5 oz lite tofu

Recipe Directions for Lite Tofu Scramble

  1. Peel and dice (into about half-centimeter cubes) 8oz of potato and 4 oz of onion and mince 1 clove of garlic.

  2. Saute in a pan with cooking spray until potatoes are lightly browned.

  3. Add 1 package drained, crumbled lite firm tofu (I had to mess with the weight because they only had lite silken tofu, but it's a 14 oz container.)

  4. Add spices (alter to taste) and saute until heated through. Serve with sprouted wheat (or other whole grain) toast.
