Like original but with lite coconut milk

Recipe Ingredients for Lite Thai Crockpot Curry

6 ounces Boneless, Skinless Chicken Breast, frozen
13 1/2 oz lite coconut milk
1 T brown sugar
1 T soy sauce (La Choy is gluten free, and so is Tamari wheat-free)
1 T Thai red or green chili paste, or more to taste (I used red, and went with 1.5 T)
1 yellow onion, chopped
2 cloves garlic, chopped
1 red bell pepper
1 green bell pepper
1 large eggplant
2 sweet potatos

Recipe Directions for Lite Thai Crockpot Curry

  1. Mix sauce and pour over chicken and onions in a crockpot.

  2. Put Veggies on top to steam not boil.

  3. Cook for 4 hours on low.
