Mini-Muffin Tins using #40 scoop make 12-14 Corn Bread Muffins

Recipe Ingredients for Lite and Tender Corn Bread

3/4 cup Cornmeal
3/4 cup Whole Wheat flour
1/2 teaspoon Salt
2 teaspoons Baking Powder
1/2 cup Soy milk
1/4 cup Applesauce
2 tablespoons Honey

Recipe Directions for Lite and Tender Corn Bread

  1. Mix together in a mixing bowl: cornmeal, flour, salt, and baking powder

  2. Stir together the soy milk, applesauce, and honey in a mesuring cup. Add 2 Tablespoons water as needed to make 1 full cup of mixture.

  3. Combine the dry ingredients, stirrng briskly until smooth.

  4. Scoop into mini muffin tins OR pour into an 8" x 8" pan

  5. Bake at 375 for 20 to 25 minutes
