Lower calorie version of potato soup.

Recipe Ingredients for Lite Potato Soup

5 cups potatoes
1 med. onion
16 oz cooked ham, cubed
3 tbls Smart Balance Light
3 tbls Flour
5 cups Fat Free Milk
1 tsp salt
1 tsp pepper
1 Red Pepper Flakes to taste

Recipe Directions for Lite Potato Soup

  1. Peel, and cube potatoes. Boil until tender. Drain; reserving liquid.

  2. Dice onion and cook with Smart Balance, salt, pepper, and red pepper flakes over medium high heat until onions are tender. Add Flour and cook for a couple more minutes. Slowly add 2 and a half cups of reserved cooking liquid, then milk. Allow to thicken slightly.

  3. Add potatoes and ham. Heat through and serve. Makes about 8 Cup and a half servings.
